Mint Chip Cereal Bars

One of my favorite ice cream flavors is mint chip. When I came across some old cereal, some marshmallows from fourth of July, and some matcha powder from some cookies I made a couple months ago, I was right away inspired to try making these Mint Chip Cereal Bars.



As a new Mom, these have been a great nibble to have on hand for walks and early mornings with the baby. They're also a nice treat after a meal- of course nowhere close to actual ice cream, but, it's a great chocolate fix for me.

Notes:

Please feel free to use whatever cereal you want- I'm sure this would be amazing with good ol' rice crispy treats-maybe even cocoa puffs?


I used the matcha for color more than anything, but combining mint with green tea is a flavor combo that can't go wrong- in my opinion. If matcha isn't your thing, I'm sure you can find a way to dye this if you really wanted the green color.


These bars keep well at room temperature, and they can also be stored in the fridge- I wrapped mine in Saran Wrap after cutting them.
