Lemon Basil Cream Cheese Stuffed Tortillas with Lemon Blueberry Sauce

We very often have corn tortillas in the house that we enjoy with some juicy carnitas that my partner loves to make, that we enjoy in tacos.

I had an idea come to me to try and play with corn tortillas, and cooking them like french toast; I ended up with these Lemon Basil Cream Cheese Stuffed Tortillas. Part of me wants to call them "French Toast Tacos", but they're really just some stuffed tortillas smothered in a homemade blueberry sauce; they are sooo good.

Notes:

I have enjoyed this recipe twice; once as a dessert after dinner, and once for breakfast.

If you don't have corn tortillas, flour tortillas should also work just fine; same applies though, I would microwave them in a damp paper towel for 15-20 seconds, so they don't break on you.
