Date Thumbprint Cookies with Chocolate Drizzle and Chopped Cashews

I made some treats to bring to my family this last Sunday, and I was so stoked how this random idea came together to make Date Thumbprint Cookies with Chocolate Drizzle and Chopped Cashews.

I actually originally thought it was going to be with peanuts, but it turned out all I had on hand was cashews; totally ok with that, you can really use any nuts / a mix of nuts if you want.

Notes:

After the chocolate drizzle has fully hardened on the cookies, you should be good to store the cookies at room temperature without running into a mess.
