Mint Chip Brookies

Cheers to March, Spring, green plant friends blooming soon, ice cream shops re-opening, and Saint Patrick’s Day shenanigans;

celebrating with this recipe for MINT CHIP BROOKIES.

Notes:

At the time, I only had large, dark chocolate chips on hand, and they were delicious in this recipe, BUT, in the future, for aesthetics, I think mini chocolate chips would look even better / are closer to resembling actual mint chip ice cream, which was what I was going for.

I like to use matcha for color and I also think the flavor is perfect with mint, BUT, feel free to also use food coloring instead if you’re not a matcha fan / don’t have any on hand.
