Honey Lemon Lavender Cookies

In Spring, I’m not surprised that I suddenly wanna make floral infused cookies; like these Honey Lemon Lavender Cookies.

Our neighbor recently gifted us some yummy shortbread cookies with honey and lavender flavors, so I was super inspired to play with those flavors in my own cookie recipe.

Notes:

I switched it up this time and used a small scoop instead of the bigger one to try and get more cookies out of the dough, to gift to some peoples (ended up with about 15 cookies), so keep in mind that the yield and baking time may range depending on how big or small you like your cookies.

Another idea for a topping is you could poke a little well into the cookie dough, add some honey to it, and then sprinkle with lavender; I loved doing that with the honey sage cookies I made back in November.
